- 1 lb (450 g) white fish fillets (such as cod or tilapia)
- 1 cup (100 g) shredded unsweetened coconut
- 1/2 cup (60 g) panko breadcrumbs
- 1/2 cup (60 g) all-purpose flour
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 tablespoon lime juice
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a shallow dish, combine flour, salt, pepper, and garlic powder.
- In another bowl, whisk the eggs with lime juice.
- In a third bowl, mix shredded coconut and panko breadcrumbs.
- Dredge each fish fillet in the flour mixture, then dip in the egg mixture, and finally coat with the coconut mixture.
- Place the coated fillets in the air fryer basket; cook for 10-12 minutes or until golden brown and cooked through.
- Serve hot with your favorite dipping sauce.
Notes
- For extra flavor, marinate the fish in lime juice for 30 minutes before coating.
- Swap out the white fish for salmon or shrimp for a different twist.
