- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley

- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, thyme, parsley, salt, and pepper.
- Place the cod fillets in a baking dish and pour the mixture over the top.
- Bake for 15-20 minutes, or until the fish flakes easily with a fork.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, you can marinate the cod in the lemon mixture for 30 minutes before baking.
- Serve with steamed vegetables or a light salad for a complete meal.
