- 4 cod fillets (about 6 oz or 170 g each)
- 1 can (14 oz or 400 g) diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent.
- Add the minced garlic, oregano, basil, salt, and pepper; cook for another minute.
- Add the canned diced tomatoes to the skillet and simmer for about 5 minutes.
- Place the cod fillets in a baking dish and pour the tomato sauce over them.
- Bake for 15-20 minutes or until the cod is cooked through and flakes easily with a fork.
- Garnish with fresh parsley before serving.
Notes
- Serve with a side of rice or crusty bread to soak up the sauce.
- Feel free to add other vegetables like bell peppers or spinach to the sauce for extra nutrition.
