- 1 can (15 oz or 425 g) black beans, rinsed and drained
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- ½ cup shredded cheese (optional)
- Fresh cilantro for garnish
Instructions
- In a skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic, chili powder, cumin, salt, and pepper. Cook for another minute until fragrant.
- Add the black beans to the skillet, stirring to combine. Cook for about 5-7 minutes until heated through.
- Warm the corn tortillas in a separate pan or microwave for a few seconds until pliable.
- Assemble the tacos by placing the black bean mixture in the tortillas. Top with lettuce, tomatoes, cheese, and cilantro as desired.
- Serve immediately and enjoy!
Notes
- For added spice, consider adding diced jalapeños to the filling.
