Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté bell peppers for about 3 minutes.
- Add spinach and cook until wilted.
- In a bowl, whisk together eggs, salt, pepper, and garlic powder, then pour into the skillet.
- Scramble the eggs with the vegetables until fully cooked.
- Remove from heat and let cool slightly, then stir in the cheese.
- Divide the egg mixture evenly among the tortillas, roll them up, and wrap in foil.
- Bake the wrapped burritos for 10-15 minutes, or until heated through.
- Let cool, then store them in the refrigerator for up to 5 days or freeze for longer storage.
