- 1 lb (450 g) chicken breast, sliced
- 2 cups (300 g) mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon cornstarch
- 1/4 cup (60 mL) chicken broth
- Salt and pepper to taste
- Cooked rice or noodles, for serving
Instructions
- Heat olive oil in a large pan over medium-high heat.
- Add garlic and ginger, sautéing for about 1 minute.
- Add sliced chicken and cook until browned and fully cooked, about 5-7 minutes.
- Stir in the mixed vegetables and cook for another 3-4 minutes.
- In a small bowl, combine soy sauce, chicken broth, and cornstarch.
- Pour the sauce over the chicken and vegetables, stirring well to combine.
- Cook for an additional 2-3 minutes until the sauce thickens.
- Serve over cooked rice or noodles.
Notes
- Feel free to customize the vegetables based on what you have on hand.
- You can add chili flakes for a spicy kick.
