Ingredients

- 4 boneless, skinless chicken breasts (about 1 lb or 450 g)
- Salt and pepper to taste
- 2 tablespoons olive oil (30 ml)
- 8 oz (225 g) mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup (240 ml) Marsala wine
- 1 cup (240 ml) heavy cream
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet over medium heat, heat the olive oil and add the chicken. Cook until golden brown, about 5-7 minutes per side. Remove the chicken and set aside.
- In the same skillet, add the sliced mushrooms and cook until they release their moisture and become golden, about 5 minutes.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 3-4 minutes.
- Stir in the heavy cream and return the chicken to the skillet. Cook for an additional 5-7 minutes, until the chicken is cooked through and the sauce thickens.
- Garnish with fresh parsley before serving.
Notes
- Serve with pasta or mashed potatoes for a complete meal.
- For added flavor, consider marinating the chicken in a bit of Marsala wine and garlic beforehand.
