Ingredients

- 12 oz (340 g) pasta (penne or fusilli)
- 1 cup (240 g) ricotta cheese
- 2 cups (60 g) fresh spinach, chopped
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) shredded mozzarella cheese
- 1/2 cup (50 g) grated parmesan cheese
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the pasta according to package instructions until al dente; drain.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add spinach and cook until wilted. Stir in ricotta, heavy cream, and season with salt and pepper.
- Combine cooked pasta with the spinach mixture and half of the mozzarella cheese. Transfer to a baking dish.
- Top with remaining mozzarella and parmesan cheese.
- Bake in the preheated oven for 20 minutes or until bubbly and golden on top.
Notes
- For extra flavor, add crushed red pepper flakes.
- Feel free to mix in other vegetables like mushrooms or bell peppers.
