- 1 medium cauliflower, riced (about 4 cups)
- 1 tablespoon vegetable oil
- 2 large eggs, beaten
- 1 cup mixed vegetables (carrots, peas, corn)
- 3 green onions, finely chopped
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- Stir in the riced cauliflower and cook for 5-7 minutes, stirring occasionally.
- Push the cauliflower to one side of the skillet and pour the beaten eggs into the other side, scrambling until fully cooked.
- Add the mixed vegetables, green onions, soy sauce, and sesame oil. Stir everything together and cook for an additional 5 minutes.
- Season with salt and pepper to taste, then serve hot.
Notes
- Add cooked chicken or shrimp for additional protein.
- Use gluten-free soy sauce for a gluten-free version.
