- 6 large eggs
- 1/4 cup mayonnaise (60 g)
- 1 teaspoon Dijon mustard
- 1 teaspoon white vinegar
- Salt and pepper to taste
- Paprika for garnish
- Chives, chopped (optional)
Instructions
- Hard boil the eggs by placing them in a pot, covering with water, and bringing to a boil. Once boiling, remove from heat, cover, and let sit for 12 minutes.
- Drain the eggs and place them in an ice bath to cool. Peel the eggs once cooled.
- Slice the eggs in half and carefully remove the yolks. Place yolks in a bowl and mash them with a fork.
- Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the mashed yolks. Mix until creamy and smooth.
- Spoon or pipe the yolk mixture back into the egg whites. Sprinkle with paprika and chopped chives if using.
- Chill in the refrigerator for at least 15 minutes before serving.
Notes
- For extra flavor, add a dash of hot sauce to the yolk mixture.
- Store any leftovers in an airtight container in the refrigerator for up to 2 days.
