Ingredients

- 1 lb (450 g) ground beef
- 1 cup (120 g) onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz/425 g) enchilada sauce
- 8 small corn tortillas
- 2 cups (200 g) shredded cheese (cheddar or Mexican blend)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, cook ground beef, onion, and garlic over medium heat until the beef is browned.
- Add chili powder, cumin, salt, and pepper. Stir until well combined.
- In a small bowl, mix 1 cup of enchilada sauce with half of the cheese.
- Spread a little of this mixture in the bottom of a baking dish.
- Soften tortillas in a microwave for 20 seconds.
- Fill each tortilla with the beef mixture, roll them up, and place them seam-side-down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake for 20 minutes or until cheese is melted and bubbly.
- Garnish with fresh cilantro if desired, serve, and enjoy!
Notes
- For extra flavor, add black beans or corn to the beef mixture.
- Top with sour cream or avocado for additional creaminess.
