Ingredients

- 2 cups (300 g) cooked rice
- 2 large eggs
- 2 tablespoons (30 ml) soy sauce
- 2 tablespoons (30 g) vegetable oil
- 1 cup (150 g) frozen peas and carrots
- 3 spring onions, chopped
- 1 teaspoon (5 g) garlic, minced
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Push the garlic to the side and crack the eggs into the skillet, scrambling them until fully cooked.
- Add the cooked rice, frozen peas and carrots, and the remaining oil to the skillet.
- Pour the soy sauce over the mixture and stir well to combine everything.
- Add the chopped spring onions, and season with salt and pepper, cooking for another 2-3 minutes.
- Serve hot and enjoy your meal!
Notes
- Use day-old rice for best results as it is drier and prevents clumping.
- Feel free to add other vegetables or proteins like chicken, shrimp, or bell peppers.
