Ingredients

- 2 lbs (900 g) lamb shoulder, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 medium carrots, diced
- 2 medium potatoes, diced
- 2 cups (480 ml) red wine
- 2 cups (480 ml) beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add lamb and brown on all sides.
- Remove lamb and add onion and garlic; sauté until soft.
- Add carrots and potatoes, stirring well.
- Return lamb to pot; stir in red wine, beef broth, tomato paste, thyme, salt, and pepper.
- Bring to a boil, then cover and simmer for 1.5 to 2 hours until lamb is tender.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, marinate lamb in red wine overnight.
- Serve with crusty bread for a complete meal.
