- 1 lb (450 g) ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz / 425 g) black beans, drained and rinsed
- 2 cups (300 g) frozen corn
- 1 can (14.5 oz / 410 g) diced tomatoes
- 2 tbsp (30 ml) taco seasoning
- 1 cup (100 g) shredded cheese (optional)
- Salt and pepper, to taste
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the onion, garlic, and bell pepper to the skillet. Cook until vegetables are tender.
- Stir in the black beans, corn, diced tomatoes, and taco seasoning. Simmer for 5-10 minutes to heat through.
- If using, sprinkle shredded cheese on top and cover until melted.
- Divide into meal prep containers and allow to cool before refrigerating.
Notes
- This dish can be served over rice or tortillas for variety.
- Feel free to add your favorite vegetables to increase nutrition.
