- 8 oz (227 g) penne pasta
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups (480 ml) vegetable broth
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
- Add the minced garlic and bell pepper, cooking for another 2-3 minutes.
- Stir in the penne pasta and vegetable broth. Bring to a boil, then reduce the heat and simmer for 10 minutes or until pasta is cooked.
- Stir in the heavy cream and Parmesan cheese until well combined. Season with salt and pepper.
- Serve hot, garnished with fresh basil.
Notes
- For added flavor, toss in some spinach or cherry tomatoes.
- This recipe can easily be scaled for larger families.
