- 1 lb (450 g) boneless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup (150 g) broccoli florets
- 1 cup (150 g) cherry tomatoes
- 1 cup (150 g) sliced bell peppers
- ½ cup (120 ml) chicken broth
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with garlic powder, paprika, salt, and pepper.
- Add chicken to the skillet and cook for 5-7 minutes on each side until browned and cooked through.
- Remove chicken from the skillet and set aside.
- In the same skillet, add broccoli, cherry tomatoes, and bell peppers; sauté for 3-4 minutes.
- Add chicken broth and lemon juice; stir to combine.
- Return chicken to the skillet and let simmer for an additional 2-3 minutes.
- Garnish with fresh parsley before serving.
