  • 8 oz (225 g) penne pasta
  • 2 tablespoons olive oil
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 cup (150 g) zucchini, sliced
  • 1 cup (150 g) bell peppers, sliced
  • 1 cup (150 g) asparagus, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (15 g) fresh basil, chopped
  • 1/4 cup (25 g) grated Parmesan cheese

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  3. Add zucchini, bell peppers, and asparagus. Cook for about 5-7 minutes until tender.
  4. Add cherry tomatoes and cook for another 2-3 minutes.
  5. Season with salt and pepper, then toss in the cooked pasta, basil, and Parmesan. Mix well and serve warm.

  • Feel free to use any seasonal vegetables you have on hand.
  • For extra flavor, add red pepper flakes or lemon juice.
