- 2 cups cooked chicken, shredded (300 g)
- 1 cup shredded cheese (cheddar or mozzarella) (100 g)
- 1 tablespoon olive oil (15 ml)
- 4 large flour tortillas
- 1/2 cup bell peppers, sliced (75 g)
- 1/4 cup onion, diced (40 g)
- 1 teaspoon taco seasoning (5 g)
- Sour cream or salsa for serving
Instructions
- In a skillet, heat olive oil over medium heat. Add bell peppers and onion; sauté until soft.
- Add the shredded chicken and taco seasoning, mixing well until heated through.
- Place a tortilla in another skillet over medium heat, sprinkle half with cheese, then layer with the chicken mixture and fold the tortilla.
- Cook for about 3-4 minutes on each side or until golden brown and the cheese is melted.
- Repeat with the remaining tortillas and serve warm with sour cream or salsa.
Notes
- For added flavor, try using pepper jack cheese.
- You can customize with vegetables or beans as desired.
