- 2 lbs (900 g) beef chuck, cut into 1-inch (2.5 cm) pieces
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups (1 L) beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium heat and brown the beef chunks on all sides. Transfer to the slow cooker.
- Add potatoes, carrots, onion, garlic, broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper into the slow cooker. Stir well to combine.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours until beef is tender.
- Adjust seasoning if needed before serving. Enjoy!
Notes
- For extra flavor, sear the beef before adding it to the slow cooker.
- Feel free to add other vegetables such as peas or mushrooms.
