- 1 lb (450 g) boneless, skinless chicken breasts
- 4 cups (960 ml) chicken broth
- 1 cup (240 ml) buffalo sauce
- 1 can (15 oz / 425 g) diced tomatoes
- 1 cup (150 g) frozen corn
- 1 cup (150 g) chopped celery
- 1 cup (150 g) chopped onion
- 2 cloves garlic, minced
- 1 tsp (5 g) dried oregano
- 1/2 tsp (2 g) black pepper
Instructions
- Place the chicken breasts in the slow cooker.
- Add the chicken broth, buffalo sauce, diced tomatoes, corn, celery, onion, garlic, oregano, and black pepper.
- Stir to combine the ingredients well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken in the pot and stir everything together.
- Serve hot, garnished with blue cheese or green onions if desired.
Notes
- For extra creaminess, add 1/2 cup (120 ml) of cream cheese during the last hour of cooking.
- Adjust the spice level by adding more or less buffalo sauce according to your taste.
