- 2 lbs (900 g) boneless chicken breasts
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups (480 ml) chicken broth
- 2 teaspoons dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon fresh parsley, chopped
Instructions
- In a slow cooker, combine the diced potatoes, onion, and garlic.
- Season the chicken breasts with thyme, paprika, salt, and pepper, then place them on top of the vegetables.
- Pour the chicken broth and olive oil over the chicken and vegetables.
- Cover and cook on low for 6-8 hours or on high for 4 hours, until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
- For added flavor, marinate the chicken in spices for a few hours before cooking.
- Leftovers can be stored in the refrigerator for up to 3 days.
