- 4 chicken thighs (about 2 lbs or 900 g)
- 1 onion, chopped
- 2 bell peppers, chopped
- 3 cloves garlic, minced
- 1 can (14 oz or 400 g) crushed tomatoes
- 1 cup (240 ml) chicken broth
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup (60 ml) red wine (optional)
- Fresh basil for garnish
Instructions
- Place the chicken thighs in the slow cooker.
- Add the chopped onion, bell peppers, and minced garlic on top of the chicken.
- Pour in the crushed tomatoes, chicken broth, Italian seasoning, salt, pepper, and red wine.
- Stir gently to combine the ingredients.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender.
- Once cooked, shred the chicken with two forks and stir it back into the sauce.
- Serve hot, garnished with fresh basil.
Notes
- Serve with pasta or crusty bread to soak up the sauce.
- You can use chicken breasts instead of thighs for a leaner option.
