- 1 lb (450 g) boneless, skinless chicken breasts
- 3 cups (720 ml) chicken broth
- 2 cups (300 g) frozen corn
- 1 cup (150 g) diced potatoes
- 1 cup (150 g) chopped carrots
- 1 cup (240 ml) heavy cream
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Add the chicken broth, corn, potatoes, carrots, onion, garlic, thyme, salt, and pepper.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- In the last 30 minutes of cooking, shred the chicken and stir in the heavy cream.
- Mix well and adjust seasoning before serving.
Notes
- For extra flavor, add a splash of hot sauce.
- Garnish with fresh parsley or chives before serving.
