- 4 bone-in, skin-on chicken thighs (about 1.5 lbs or 680 g)
- 1 cup (240 ml) chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional: chopped fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear the chicken thighs for about 3-4 minutes on each side until golden brown.
- Transfer the chicken to the slow cooker. Add onion, garlic, chicken broth, paprika, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and fully cooked.
- Once done, serve garnished with fresh parsley, if desired.
Notes
- You can substitute chicken thighs with chicken breasts if preferred.
- For added flavor, consider adding carrots or potatoes to the slow cooker.
