- 1 lb (450 g) boneless, skinless chicken breasts
- 16 oz (450 g) potato gnocchi
- 1 cup (240 ml) chicken broth
- 1 cup (240 ml) heavy cream
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup (150 g) frozen peas
- 1 cup (90 g) baby spinach
- 1 teaspoon dried thyme
- Salt and pepper, to taste
Instructions
- Place the chicken breasts in the slow cooker, and add the diced onion, minced garlic, thyme, salt, and pepper.
- Pour the chicken broth over the chicken, cover, and cook on low for 6 hours or high for 3 hours.
- After cooking, shred the chicken using two forks and stir in the heavy cream, frozen peas, and spinach.
- Stir in the gnocchi, cover, and cook for an additional 20 minutes until the gnocchi is tender.
Notes
- For added flavor, consider adding fresh herbs.
- Leftovers can be stored in the fridge for up to 3 days.
