- 2 lbs (900 g) lamb shoulder, cut into chunks
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups (480 ml) beef broth
- 1 cup (240 ml) red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a skillet, heat olive oil over medium-high heat and brown the lamb chunks on all sides.
- Transfer the browned lamb to the slow cooker, then add the carrots, potatoes, onion, and garlic.
- In a bowl, mix beef broth, red wine, tomato paste, thyme, rosemary, salt, and pepper. Pour over the lamb and vegetables in the slow cooker.
- Cover and cook on low for 6-8 hours or high for 4-5 hours, until the lamb is tender.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For a thicker stew, you can add a cornstarch slurry during the last 30 minutes of cooking.
- Feel free to add other vegetables like peas or green beans in the final 30 minutes for extra color and nutrition.
