- 1 cup dried lentils (200 g)
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth (960 ml)
- 1 can diced tomatoes (14.5 oz / 400 g)
- 2 teaspoons ground cumin
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Rinse lentils under cold water and drain.
- In the slow cooker, combine lentils, chopped onion, carrots, celery, garlic, vegetable broth, diced tomatoes, cumin, thyme, salt, and pepper.
- Drizzle olive oil over the top and stir to combine.
- Cover and cook on low for 8 hours or on high for 4 hours, until lentils are tender.
- Adjust seasoning if necessary and serve hot, garnished with fresh parsley.
Notes
- Feel free to add your favorite vegetables like spinach or bell peppers.
- This soup can be stored in the refrigerator for up to 5 days.
