Ingredients

- 1 cup (200 g) split peas
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 smoked ham hock (about 1 lb / 450 g)
- 4 cups (960 ml) low-sodium chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Rinse the split peas under cold water and set aside.
- In the slow cooker, combine the split peas, onion, carrots, celery, and ham hock.
- Pour in the chicken broth and add the thyme and bay leaf.
- Cover and cook on low for 6-8 hours or until peas are tender.
- Remove the ham hock, shred the meat, and return it to the soup.
- Season with salt and pepper to taste before serving.
Notes
- For a vegetarian version, omit the ham hock and use vegetable broth.
- Add more or less liquid depending on your preferred soup consistency.
