Ingredients

- 1 lb (450 g) beef stew meat, cut into cubes
- 4 cups (950 ml) beef broth
- 2 cups (300 g) mixed vegetables (carrots, peas, corn)
- 1 cup (150 g) potatoes, diced
- 1 cup (150 g) tomatoes, diced (canned or fresh)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a skillet, heat olive oil over medium heat and brown the beef cubes on all sides.
- Transfer the browned beef to the slow cooker and add beef broth, mixed vegetables, potatoes, tomatoes, onion, garlic, thyme, salt, and pepper.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef and vegetables are tender.
- Serve hot and enjoy!
Notes
- Feel free to add any of your favorite vegetables.
- For a thicker soup, you can add a cornstarch slurry during the last 30 minutes of cooking.
