- 12 large mushrooms
- 1 cup (150 g) fresh spinach, chopped
- 1 cup (150 g) feta cheese, crumbled
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/4 cup (25 g) breadcrumbs
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon paprika
Instructions
- Preheat your oven to 375°F (190°C).
- Clean the mushrooms and remove the stems. Set the caps aside.
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add the chopped spinach and cook until wilted, about 2 minutes.
- In a bowl, combine spinach, feta, breadcrumbs, pepper, salt, and paprika.
- Stuff each mushroom cap with the spinach and feta mixture.
- Place stuffed mushrooms on a baking sheet.
- Bake for 20 minutes or until the mushrooms are tender and tops are golden.
- Serve warm and enjoy!
Notes
- For extra flavor, add herbs like dill or parsley to the filling.
- These can also be made in advance and stored in the refrigerator before baking.
