Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth (950 ml)
- 2 cans (15 oz each) white beans, drained and rinsed
- 3 cups kale, chopped
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- Juice of 1 lemon
Instructions
- In a large pot, heat the olive oil over medium heat and sauté the chopped onion until translucent.
- Add the garlic and sauté for another minute until fragrant.
- Pour in the vegetable broth and bring to a boil.
- Add the white beans, chopped kale, thyme, smoked paprika, salt, and pepper. Reduce heat and simmer for 15 minutes.
- Stir in the lemon juice before serving.
Notes
- For added protein, consider adding diced chicken or turkey.
- This soup can be stored in an airtight container in the fridge for up to 4 days.
